CHICKEN RICE

INGREDIENTS

  • Rice
  • Chicken
  • Red and green pepper
  • Celery
  • garlic cloves
  • Onion
  • Red color
  • Water
  • Salt
  • Oil

PREPARATION

  1. Cook the chicken in water and salt.
  2. Cut all the vegetables in julienne and sauté them with red color in a pot with oil.
  3. Dismantle the chicken and mix it with the vegetables.
  4. Add the rice, water, salt and combine all the above, mix it very well leave until the water is reduced, cover the pot over low heat until the rice is ready.

COCONUT RICE

INGREDIENTS

  • Rice
  • Coconut
  • sugar
  • Salt
  • Water

PREPARATION

  1. Break the coconut, cut it into pieces, place it in the blender with water and crush it until you remove the milk.
  2. Put a pot on the fire, add coconut milk, add a spoon with sugar and leave until golden brown.
  3. Then add all the coconut milk with the rice and add the sugar and salt until it tastes the same.
  4. Let it cook on fire.

STEWED TONGUE

INGREDIENTS

  • Cow tongue
  • Water
  • Red onion
  • Coriander
  • Celery
  • Tomato
  • Chive
  • Garlic cloves
  • Brown sugar
  • Cloves
  • Spicy black pepper
  • Cumin
  • Salt

PREPARATION

  1. The tongue is placed in a pot, let it cook for a few minutes and then the fat and hard parts are removed.
  2. When the tongue is clean, it is cut into slices.
  3. The other ingredients are liquefied in half a liter of water, minus the cloves.
  4. The above is put to cook in a pot, the tongue slices are added and half a rate of brown sugar is added and the teeth are left on low heat, letting the tongue finish to soften and take all the flavors.

BOCACHICO WIDOWER

INGREDIENTS

  • Salty and open bocachicos
  • Lemons
  • Water
  • Chopped long onion
  • Crushed garlic cloves
  • Red onion
  • Chopped peppers
  • Tomato
  • Grated carrot
  • Red pepper in julienne

PREPARATION

  1. Wash the fish with water to remove some salt.
  2. Put the juice of two lemons and crushed garlic on the fish.
  3. Leave a time for the flavors to permeate.
  4. Then add to the bocachico all the chopped vegetables inside the fish and close it with aluminum foil.
  5. Cover in a pot until the fish is fully cooked.

MOTE DE QUESO

INGREDIENTS

  • Yam Hawthorn
  • Water
  • Garlic.
  • Onion
  • Chive
  • Minced coastal cheese.
  • Red paprika
  • Salt

PREPARATION

  1. The yam is peeled and cut into medium cubes.
  2. Then it is cooked in a large pot with enough water, then it is expected to cook and thicken.
  3. Apart, garlic should be crushed by adding a pinch of salt, then cut the vegetables and fry them in a little oil. When it is already golden, it is added to the pot that contains the yam.
  4. Finally, cut the diced coastal cheese, let it cook for a few minutes, cover the pot and turn off the heat.
